FSMA has shifted the focus on food safety from response to prevention. One preventive component for food and beverage manufacturers is the ongoing monitoring of risks – including those that are microbiological and possibly hard to detect visually. Manufacturers producing ready-to-eat (RTE) foods that have a significant risk of pathogenic hazard exposure must have an effective environmental monitoring program in place.
If companies aren’t strategic about leveraging their existing practices and GMPs, these programs can become both diluted and expensive!
